Mindful Mule
A lighter, fresher take on the classic mule. Crisp and clean with ginger, lime, and a splash of soda—this version supports Dry(ish) January without skimping on flavor or fun.

Ingredients
- 2 oz Pollinator Vodka (or Crimson Amaro for a bittersweet, lower-ABV profile)
- ¾ oz Freshly squeezed lime juice (approx. half a large lime)
- 1 tsp Freshly grated ginger (or two ½-inch coins)
- 4 oz Fever-Tree Light Ginger Beer or Sparkling Water
- 2-3 Fresh mint sprigs
- Garnish: Lime wheel and a crystallized ginger piece (optional)
Instructions
- Muddle the Aromatics: Place the fresh ginger and lime juice in the bottom of a copper mug or highball glass. Muddle firmly for 10–15 seconds to release the gingerols and oils. This creates the flavor "base" that replaces the need for heavy syrups.
- Activate the Mint: Take one sprig of mint and clap it sharply between your palms, then drop it into the glass. This "slap" ruptures the capillaries in the leaves, releasing the aromatic menthol without making the drink bitter (as over-muddling can).
- Combine the Base: Pour in your Pollinator Vodka. Stir the vodka with the ginger and lime mixture for a few seconds to ensure the honey-kissed spirits are fully integrated with the citrus acids.
- Chill and Dilute: Fill the vessel to the brim with crushed ice. Crushed ice is preferred here because it provides more surface area to chill the drink rapidly, which is essential for the refreshing "snap" of a mule.
- Lengthen and Lift: Top with the light ginger beer or sparkling water. Pour slowly to preserve the carbonation. Use a long-bar spoon to gently "lift" the ingredients from the bottom—one upward motion is enough to mix without bruising the bubbles.
- Garnish with Intention: Add the final mint sprig and a lime wheel. Position the mint near the straw or the rim so the scent hits the nose first, enhancing the perception of freshness.
