At Pollinator Spirits, we believe that great spirits begin long before distillation. They start with the land, the ingredients, and a commitment to doing things the right way. Founded in the Catskills, our women-owned distillery in New York was built around a simple idea: create spirits that are both expressive and approachable, without sacrificing quality or integrity. From sourcing non-GMO grains grown in the Finger Lakes to working with wildflower honey that supports pollinator ecosystems, every decision reflects our values. Our process is rooted in precision. During distillation, we carefully separate heads, hearts, and tails to remove harsh congeners and preserve only the cleanest expression of the spirit. This attention to detail allows us to create whiskey, gin, and amaro that are smooth, balanced, and designed for sipping. What sets our whiskey apart is our finishing technique. After years of aging, our rye whiskey and bourbon are placed into barrels coated with wildflower honey or maple syrup. This method softens the spirit naturally, rounding out its edges and creating a profile that is both complex and easy to enjoy. We produce our spirits in small batches, using locally sourced ingredients and sustainable practices. Our goal is not just to make craft spirits, but to create something meaningful—products that reflect a connection to place, process, and community.
