Bees & Berries: A Festive Cocktail with Pollinator Gin & Crimson Amaro

Bright, botanical, and berry-forward, crafted with Pollinator Gin, Crimson Amaro, and wildflower honey for holiday gatherings and winter nights.

Ingredients

1.5 oz Pollinator Gin
0.75 oz Crimson Amaro
0.75 oz fresh lemon juice
0.5 oz honey syrup*
3–4 fresh blackberries (plus extra for garnish)
Ice
Optional: a small sprig of rosemary or thyme for garnish

*Honey Syrup: Mix equal parts wildflower honey and warm water until fully dissolved.

Instructions

In a shaker, gently muddle the blackberries until they release their juices.
Add Pollinator Gin, Crimson Amaro, lemon juice, and honey syrup.
Fill the shaker with ice and shake vigorously for 10–12 seconds.
Fine-strain into a chilled coupe, or pour over fresh ice in a rocks glass.
Garnish with fresh blackberries and an herb sprig for a festive finish.
