The Bee’s Knees 2.0

A classic redefined with raw wildflower honey and citrus. This bright sip highlights our botanical-forward gin with a clean, sweet finish that celebrates the first blooms of the season.

Ingredients

  • 2 oz Pollinator Beespoke Gin
  • ¾ oz freshly squeezed lemon juice
  • ½ oz freshly squeezed grapefruit juice
  • ¾ oz raw wildflower honey syrup (equal parts raw honey and warm water)
  • 2 drops food-grade orange blossom water (optional — intensifies the floral character)

Garnish: Dehydrated lemon wheel, edible flower, or thin grapefruit twist

Instructions

  1. Prepare the honey: Combine the raw wildflower honey with warm water, stirring until fully dissolved, then build the drink. This is the heart of the 2.0: the honey isn't a sweetener here; it's the story.
  2. Combine and season: Add the Pollinator Beespoke Gin, lemon juice, grapefruit juice, honey syrup, and orange blossom water (if using) to a cocktail shaker. The grapefruit adds a gentle bitterness that keeps the sweetness honest and lifts the gin's more delicate botanicals toward the surface.
  3. The dry shake: Before adding ice, seal the shaker and shake vigorously for 10–12 seconds. This step aerates the citrus and honey, giving the final pour a slightly silkier texture and a brighter, more cohesive flavor than a standard shake alone delivers.
  4. Chill and sharpen: Open the shaker, fill with plenty of ice, and shake again for 15 seconds until the tin is frost-etched and cold all the way through. The double shake — first dry, then with ice — is the difference between a good Bee's Knees and an exceptional one.
  5. Strain and serve: Fine-strain into a chilled coupe.
  6. The finishing touch: Place a dehydrated lemon wheel on the surface, or express a thin grapefruit twist over the glass and rest it on the rim. If using an edible flower, float it at the center.
