½ oz wildflower honey syrup (equal parts honey and warm water)
3 oz cold mountain spring water or still water
1 oz sparkling water (to finish)
Garnish: Lemon wheel, fresh thyme sprig, or mint sprig
Instructions
Prepare: Squeeze your lemons. Preferably, use real citrus, not concentrate, to highlight Pollinator Vodka’s clean, grain-forward character.
Build the sweetness: In a tall glass or shaker, combine the honey syrup and lemon juice first. Stir briefly to integrate.
PourPollinator Vodka over the honey-lemon base. Stir again to combine, allowing the vodka’s smooth, slightly sweet finish to create natural symmetry with the syrup.
Fill the glass with large ice cubes. Add still water to open up the drink. Finish with a slow pour of sparkling water down the inside edge of the glass, keeping lemonade the star.
Garnish with the season: Perch the lemon wheel on the rim and tuck a thyme sprig or mint sprig alongside. Gently express the herb between your fingers before placing it — releasing its oils sets the aromatic tone before the first sip.
