
Botanical Garden Spritz
An airy garden party essential featuring Beespoke Gin and local herb infusions. Crisp mountain spring water and bubbles lift the delicate floral notes of our botanical spirit for a perfectly balanced afternoon spritz.

Ingredients
- 1.5 oz Pollinator Beespoke Gin (Botanical-forward with fresh floral and herbal notes)
- ½ oz elderflower liqueur
- ½ oz wildflower honey syrup (equal parts honey and warm water)
- ½ oz freshly squeezed lemon juice
- 2 oz mountain spring sparkling water
- 1.5 oz dry prosecco or dry sparkling wine
- 3 fresh cucumber slices
Garnish: Fresh mint sprig, lemon wheel, edible flower (optional)
Instructions
- Muddle the garden: Place the cucumber slices in the base of a large wine glass or stemless. Muddle gently. Cucumber is a bridge ingredient here: it softens the Beespoke Gin's botanicals and sets a fresh, green foundation before anything else enters the glass.
- Build the base: Fill the glass with ice. Add the Pollinator Beespoke Gin, elderflower liqueur, honey syrup, and lemon juice directly over the ice. The honey syrup echoes the wildflower character already present in the gin — a nod to Pollinator's Catskills roots. Stir gently, 5 to 6 rotations, to marry the layers without dulling the aromatics.
- The effervescent lift: Pour the sparkling water slowly down the side of the glass, then crown with the prosecco. Pouring down the side rather than directly over ice preserves the carbonation and keeps the spritz lively. Do not stir after this point — the bubbles will integrate on their own, carrying the floral notes upward with every sip.
- Garnish and serve: Perch the lemon wheel on the rim, tuck the mint sprig alongside so its aroma greets the nose before the lips, and float an edible flower on the surface if using. Sip immediately — this is a drink that rewards presence.
